INGREDIENTS
1 cup sweet potato from approximately 1/2 sweet potato
1 banana
1 cup low-fat milk
1/4 cup orange juice
Handful of ice cubes
Optional:
Pinch of cinnamon
1 tablespoon honey or maple syrup
STEPS
- Scrub sweet potato clean under running water. Pierce the sweet potato skin with a fork 5 to 6 times. Place the sweet potato on a microwave-safe plate and microwave for 5-10 minutes, or until a knife cuts through easily. Allow to cool, then peel. Measure one cup of sweet potato for recipe. Refrigerate remaining sweet potato for use later.
- Place sweet potato and all other ingredients in the blender. Blend until smooth. Add ice as needed to get to desired consistency.
- Split between 2 cups and serve.
