INGREDIENTS

2 cups cooked chicken, diced

½ cup celery

¼ cup green pepper

¼ medium onion

½ cucumber

½ cup grapes

1 small apple

¼ cup plain, non-fat yogurt

STEPS

  1. Use leftover cooked chicken or cook enough chicken to make 2 cups of diced chicken.
  2. Rinse the celery, green pepper, cucumber, grapes, and apple. Chop the celery and green pepper into small pieces.
  3. Peel and chop ¼ of a medium onion and half of a cucumber.
  4. Chop the apple into pieces. Leave the peel on the apple.
  5. Cut the grapes in half.
  6. Put all ingredients in a large bowl. Stir together.

IDEAS

  • Serve on lettuce, crackers, or bread.
  • Substitute canned chicken.
