INGREDIENTS
1 (8 ounce) sweet potato
4 ounces lean ground turkey
3/4 teaspoon salt-free fajita seasoning
1/3 cup fresh salsa, drained
2 tablespoons green salsa
2 tablespoons fat-free Greek yogurt
Nonstick cooking spray
STEPS
- Using a fork, poke the sweet potato about 5 times on all sides. Place potato in a microwave-safe bowl or dish. Cover the dish loosely with a paper towel. Microwave on high for 3 minutes.
- Carefully flip the potato and continue microwaving for 2 to 4 minutes longer, or until cooked and tender.
- Place a small nonstick skillet over medium-high heat. Lightly spray with cooking spray. Add ground turkey and seasoning. Cook until no longer pink and fully cooked.
- Cut an opening in the potato without cutting it completely in half. Put potato in a bowl.
- Top the potato with salsa, turkey mixture, and green salsa. Add yogurt on top. Serve immediately.
IDEAS
- Substitute chicken for ground turkey.
- Garnish with reduced fat cheddar cheese and cilantro if desired.
