INGREDIENTS

1 (8 ounce) sweet potato

4 ounces lean ground turkey

3/4 teaspoon salt-free fajita seasoning

1/3 cup fresh salsa, drained

2 tablespoons green salsa

2 tablespoons fat-free Greek yogurt

Nonstick cooking spray

STEPS

  1. Using a fork, poke the sweet potato about 5 times on all sides. Place potato in a microwave-safe bowl or dish. Cover the dish loosely with a paper towel. Microwave on high for 3 minutes.
  2. Carefully flip the potato and continue microwaving for 2 to 4 minutes longer, or until cooked and tender.
  3. Place a small nonstick skillet over medium-high heat. Lightly spray with cooking spray. Add ground turkey and seasoning. Cook until no longer pink and fully cooked.
  4. Cut an opening in the potato without cutting it completely in half. Put potato in a bowl.
  5. Top the potato with salsa, turkey mixture, and green salsa. Add yogurt on top. Serve immediately.

IDEAS

  • Substitute chicken for ground turkey.
  • Garnish with reduced fat cheddar cheese and cilantro if desired.
