INGREDIENTS

2 cups cooked and cooled brown rice

½ cup celery, diced

¾ cup raisins

¼ cup chopped nuts

2 tablespoons vegetable oil

1 tablespoon orange juice

¼ cup fresh parsley, chopped

3 green onions, sliced

1 can (15 ounces) mandarin oranges packed in juice, drained

¼ teaspoon salt

¼ teaspoon pepper

STEPS

  1. Rinse all fresh produce and outside of can of mandarin oranges before preparing food.
  2. Mix all ingredients together in medium-sized bowl.
  3. Chill for 1 hour to allow flavors to blend.
  4. Refrigerate leftovers within 2 hours.

IDEAS

  • Use any type of chopped nuts, including almonds, walnuts, or pecans.
  • Substitute 1 tablespoon dried parsley instead of fresh parsley.
  • Substitute 1 tablespoon vinegar for orange juice.
  • Try adding ¾ cup diced green peppers or any other crunchy vegetable.
  • Substitute cooked whole wheat couscous for brown rice.
