INGREDIENTS
3 large cucumbers
2 medium tomatoes
1 yellow bell pepper
1 small red onion
¼ cup fresh cilantro
½ cup canned, low sodium black beans
½ cup whole kernel corn
1 ounce package dry ranch dressing mix
¼ cup apple cider vinegar
Optional:
2 tablespoons sugar
STEPS
- Rinse cucumbers, tomatoes, bell pepper, and cilantro.
- Dice cucumbers, tomatoes, bell pepper, and red onion into small, bite-sized pieces. Chop cilantro. Add diced vegetables and cilantro to a large bowl.
- Drain and rinse black beans. Add to bowl with vegetables.
- Add corn. If using canned, drain and rinse before adding to vegetables.
- In a small bowl, mix ranch dressing mix, vinegar, and sugar, if using.
- Pour dressing over the vegetable and bean mixture. Stir well.
- Serve immediately or refrigerate until ready to serve.
IDEAS
- Substitute pinto beans, garbanzo beans, or other types of beans for black beans.
- Use fresh, frozen or canned whole kernel corn.
