INGREDIENTS
3 cups cooked chicken, chopped
1 (20 oz.) can pineapple chunks in juice, drained
1 (11 oz.) can mandarin oranges, drained
3/4 cup chopped celery
1 cup seedless grapes, halved
1/4 cup low-fat mayonnaise
1/4 teaspoon salt
1/4 teaspoon pepper
8 cups of lettuce leaves or 8 large lettuce leaves
Optional:
1/4 cup pecans, divided
STEPS
- Rinse fresh produce before food preparation. Clean the tops of cans.
- In a large bowl, add the chicken, pineapple, oranges, celery, grapes, and half of the pecans, if using.
- Stir in mayonnaise, salt, and pepper.
- Cover and chill in refrigerator until ready to serve.
- To serve, place 2/3 cup of chicken mixture on top of 1 cup of lettuce leaves or 1 large lettuce leaf.
- Sprinkle remaining pecans on top of chicken salad, if using.
IDEAS
- Substitute nonfat, plain yogurt for mayonnaise.
