INGREDIENTS

1/3 cup lime juice
1/4 cup olive oil or canola oil
1 teaspoon garlic powder
1/2 teaspoon salt
1/8 teaspoon cayenne pepper
1 (15 oz.) can low sodium black beans,
drained and rinsed
1 cup corn kernels
1/2 medium avocado, peeled, pitted,
and diced
1 green pepper, chopped
1 medium tomato, chopped
1/2 cup onion, chopped
1/4 cup cilantro, chopped

STEPS

  1.  Rinse all produce under cool running water before food preparation.
  2. Place lime juice, olive oil, garlic, salt, and cayenne pepper in a small bowl and
    whisk until well blended.
  3. In a large bowl, combine beans, corn, avocado, green pepper, tomato, onions,
    and cilantro. Pour olive oil and lime dressing over the chopped vegetables. Stir.
  4. Serve immediately with chips or refrigerate until ready to serve.
